Mango Bavarois
Serves 6-8
Ingredients:
Cream together egg yolks, sugar and vanilla pod until pale in colour. Slowly add the cream and mango Coulis and mix.
Cook over a water bath until eggs are cooked and the mixture thickens, and then transfer into a shot glass leaving enough room for mango and orange jelly.
Mango and Orange Jelly
Ingredients:
Gently pour jelly into shot glass and place into fridge and leave for an hour until jelly has set.
