Book Online
Cream the Butter and Sugar together until pale and soft. Add the spices and salt and mix in the eggs 1 at a time. Beat on high speed until all the egg is incorporated, add the oil and continue to mix. Add the grated Carrot to the mix and gently fold in the flour.
Transfer to a greased loaf tin and bake in a pre-heated oven at 160°C for 40-45 minutes. Leave to cool before turning out.
